Frittata

Ingredients
(To make a large frittata to serve four for dinner, plus two cups of frittata for lunch)
1 courgette
2 white onions
2 red onions
1 red pepper
1 yellow pepper
1 green pepper
Handful of peas
Salt and pepper
6 eggs
Dried thyme leaves
Olive oil
Method
Cut the veggies into small pieces - this step is important if you are going to pour this into a silicone cup, but not so vital if you only want to slice it to fit into a bento.
Fry the vegetables in batches in olive oil and salt until softened. I usually cook all the peppers, then all the onions, then the courgette and the peas. The last two take the least amount of time, especially if you cut the courgette very thinly (I use a vegetable peeler).
Once everything is cooked, prepare a bowl or jug with the six eggs. Beat well, and add seasoning to taste. Now, pour in the hot vegetables and stir. This helps the mix to combine before you start cooking, and gives everything a head start.
To cook on the stove top, pour olive oil into your pan to give a light coating, then pour in your mix and cook gently until the top is not quite liquid. Sprinkle on your thyme. Then, push the whole pan under a grill (broiler) or a hot oven to finish - cook until brown on top.
To cook in a silicone cup, grease one lightly and pour in the egg mixture. Sprinkle on your thyme and bake in an oven on a baking tray at 180c for around 10 minutes. It's easy to tell when the frittata is cooked, because when you squeeze it it will be firm and no egg will ooze out. If it does, just return to the oven to cook some more.

NOTES
There are so many variations on this dish that I cook it almost every couple of weeks. Try different herbs (basil, oregano, chives, parsley) on the top, or use your favourite cheese - such as cheddar or parmesan.
Vary the contents of your frittata - you can also use cherry tomatoes, potatoes, asparagus, mushrooms, sweetcorn or spinach, but really there's no end to the veggies you can include. You can also add hard cheeses or meat to the mix - try chorizo, ham, bacon, pancetta, sausage, salami or feta.
Flavour the mix by frying indian spices, garlic, or your favourite seasoning in with the onions.
