Carrot Glace

Ingredients

1 large carrot

½ tsp sugar

1 tsp butter

Method

Cut the carrot into thin slices, then use some tiny vegetable cutters to make some different shapes – using two different shapes gives it more interest.

Now add the shapes to a saucepan and add enough water to cover. Bring to the boil and add the sugar and butter and simmer until all the liquid has evaporated.

This makes four small servings.

Arrange the carrots inside a divider dish before they cool, as the butter will harden.
