Pepper Eggs

Ingredients
1 small bell pepper
1 quail egg per person
Method
This is so simple it’s barely a recipe at all. All you need to do is take a small bell pepper, cut into thin rings, and fry in a frying pan for a few seconds. Then crack a quail egg into the middle and fry on a low heat until the yolk is set.
Notes:
Idea taken from the book Hana Sushi (highly recommended for cute ideas!)
Ensure you cut the pepper evenly, as if your cut isn’t straight the egg will run out all over the pan. This will still happen a little bit, but don’t panic because you can cut off the extra,
Fry some extra pepper rings and place them underneath your pepper egg in order to raise the height inside the bento box and improve presentation.
